Potatoes Aren't Evil
Potatoes have gotten a pretty bad reputation, and for no good reason! There are many benefits to eating potatoes, especially with the skin. Research on purple potatoes found study participants lowered diastolic blood pressure and increased systolic. Researchers used cooked purple potatoes in the study because of the antioxidants in the coloring and the resistant starch from cooking. Cooking with the skin on prevents the nutrients from escaping.
Why should you care? Cooked purple potatoes with skin may have the following effects-
reduce insulin sensitivity
reduce diet-related disease
provide the body with energy
Leave you feeling fuller longer
As you can see, consuming cooked purple potatoes can have many excellent benefits. There are many benefits to regular potatoes as well, so do not feel like you are restricted to the purple.
Bottom line: Eat potatoes. They are healthy, just ensure you prepare them in healthy ways, eat serving sizes and eat them in moderation. They are healthy and good for you just like most other pure and natural foods. Eat a varied diet rich in whole and natural foods.
